Will tortillas soak up nonstick cooking spray and get soggy?
I’m making tortilla bites, and the recipe calls for you to spray muffin tins with nonstick cooking spray, lay the tortilla in, and then put in your toppings and bake. It says to serve them immediately after they come out of the oven.
My question is, can I prepare everything and let it sit for a few hours before baking? I’m making these for a get together, and don’t want to spend a lot time away from my company putting them together if I can have them ready beforehand and just throw them in the oven.
I’m just concerned that if I get them ready and let them sit, that the tortillas will soak up the cooking spray or the other ingredients and get soggy and not bake well.
What do you suggest?

The cooking spray should make them crispy not soggy.
If you have non-stick muffin pans, you don’t really need the spray, so go ahead and assemble everything ahead of time. If the pans aren’t non-stick, spray them and put the tortillas in but don’t push them down firmly into the opening. They wouldn’t get _too_ soggy from the spray, but they would absorb it and possibly stick to the pan.
maybe if you have baking cups you could put them in the tins & you don’t need cooking spray that would be easier to serve & less clean up
The cooking spray will not nake them siggy but other ingredients may if you make them up a couple fo hours ahead of time.
