why use sour cream in cake recipes?



Many pound cake recipes have sour cream listed in its recipes – I was wondering why sour cream & not other types of creams. What does it do to the cake? Does it give tangy flavour? Does it chemically change the cake somehow?

It makes cakes moist. Just one of many things used to increase the moistness, another being pudding, another being mayonnaise.

It makes them taste better and it also adds consistency.

it makes all the unusual flavors in the cake to burn when you put it in the oven otherwise it would taste like egg

It makes pound cakes very moist and rich. It also gives it an amazing flavor. I add lemon, almond and vanilla flavoring. I’d bake one now if I wasn’t dieting.
