Why is almond cheese low in fat?
I’ve used Lisanatti Almond Cheese as a low fat alternative to regular cheese. It contains 1 g of fat per 28 g (1 oz) serving, vs 9 g for regular cheese or 4-6 grams per reduced fat cheese. But almonds are very high in fat. Anyone know?

I don’t know exactly, but it’s main ingredient is an almond base made with water and crushed almonds. Since it isn’t all almonds, the fat content in the almonds itself is not as significant in the final product.
