Which clone recipe of Old Bay Seasoning is most like real thing?



Old Bay Seasoning is not available in my neck of the woods. A quick search online reveals three different recipes. Does anyone know which recipe is most like the real thing?

Recipe 1:
1 Tbsp. ground bay leaves
2-1/2 tsp. celery salt
1-1/2 tsp. dry mustard
1 tsp. ground black pepper
1/2 tsp. ground white pepper
1/2 tsp. ground nutmeg
1/2 tsp. ground cloves
1/4 tsp. ground allspice
1/2 tsp. ground ginger
1 tsp. paprika
1/4 tsp. crushed red pepper flakes
1/4 tsp. ground mace
1/4 tsp. ground cardamom

Recipe 2:
1 tablespoon celery seeds
1 tablespoon whole black peppercorns
6 bay leaves
1/2 teaspoon whole cardamoms
1/2 teaspoon mustard seeds
4 whole cloves
1 teaspoon sweet Hungarian paprika
1/4 teaspoon mace

Recipe 3:
1 Tbsp. Celery Salt
1/4 tsp. Paprika
1/8 tsp. Black Pepper
1/8 tsp. Cayenne Pepper
Pinch Ground Dry Mustard
Pinch Mace
Pinch Cinnamon
Pinch Cardamom
Pinch Allspice
Pinch Ground Clove
Pinch Ginger

how can you have access to all of those seasoning and not old bay? have you called around for sure?

It seems that your Recipe #2 is the one that I use:

1 Tbsp. Celery Seed
1 Tbsp Whole Black Peppercorns
6 Bay Leaves
1/2 tsp. Whole Cardamom
1/2 tsp. Mustard Seed
4 Whole Cloves
1 tsp. Sweet Hungarian Paprika
1/4 tsp. Mace
Dash of Salt

In a spice grinder or small food processor, combine all of the ingredients. Grind well and store in a small glass jar.

# 1 is closest. The overriding elements in the original are
Salt, Paprika, Cellery, Cayene, Mace/allspice/clove, then mustard. In that order.
I have been playing around with different blends of my own because my crab cakes have been a little on the salty side and I am blaming it on the Old Bay. I love the flavor, but the salt is a killer. (i may have got a bad batch).
