When all natural peanut or almond butter says it has to be refrigerated, does it really have to be?
I don’t have a refrigerator, and I have some almond butter. It doesn’t come refrigerated, but says refrigerate after opening. Is this just to keep the oil from separating again, or will it spoil?

If it does not have any preservatives, it will possibly go rancid if left out, just like nuts can because of the high fat content.

All natural foods require refrigeration because they don’t have any preservatives in them that make other foods shelf stable. In your case a couple of days in the cupboard might be okay, but not more than a week or two.
Think about it. Your opening up a food substance to the environment. An environment that is filled with bacteria. The item may not “spoil” , but something probably will start growing in it.
it will eventually spoil and taste bad and probably make you sick
