What the heck is up with sour cream in cheesecake?
I have made many a cheesecakes, but never in my life have i ever heard of putting sour cream in cheesecakes… why do people do this? Does it have any special benefits? I am baking cheesecakes tomorrow but I have no sour cream, nor do I have plans to go all the way to the store just for that one item… any good recipes without sour cream or lemon juice? Every single recipe i look up has both of those.
YES I MEAN SOUR CREAM.

Lol… I think you mean cream cheese. Sour cream would be gross!
Sour cream is a stabilizer, lemon juice is optional. you can leave the lemon juice out and it wont affect the quality only the taste. it wont have the same citrus twang to it. When looking for cheesecake recipes make sure you put new york cheesecake to avoid the sour cream. This is the recipe I use all the time.
I know what you mean – I’m not sure either but here are recipes I have made (the rocky road one is especially heavenly) and all turn out great. Merry Christmas!
My family’s favorite holiday dessert is a pumpkin cheesecake which has a topping made with sour cream, sugar and vanilla.
It’s poured over the baked cake and then baked for only five minutes more. It creates a beautiful, shiny, delicious topping for the cake and it looks like it was done professionally. The sour cream topping also fills in any cracks that may occur in the cake making the end result look and taste wonderful.
