Courgette and Tomato Baked Potato
Ingredients
1 large baking potato
1 courgette
1 small brown onion
2 tomatoes
olive oil
basil
vegan Worcestershire sauce
pepper
I like to cook the potato in the microwave for 5 minutes before putting it in the oven to bake to make sure it is fluffy inside. Bake in a 200 degree oven for 1 hour.
Remove the skin from the tomatoes by blanching in boiling water for 5 minutes. Then finely chop them and set them aside. Finely chop the onion and courgette. Gently warm the olive oil in a pan and fry the onion until it starts to become see through then add the courgette and continue to cook until they start to brown. Stir in the tomatoes and add in a dash of vegan Worcestershire sauce, some torn up basil leaves and some freshly ground black pepper.
Cut open the potato and top with the courgette mixture.
You can make home fries. Peel the potatoes, then chop them into small cubes, boil them for a couple minutes, strain them, heat some oil in a skillet and put the potatoes in when the oil is hot. Brown the potatoes, remove from oil, salt, pepper ketchup on the side. mmmmmm
stove top brand stuffing goes great with ham…
You can peel the potatoes, and then quarter them. Get some fresh yams, peel them and quarter them. Then put the potatoes and yams in a gallon-sized ziploc and put spices in the bag. Then shake, then bake until the potatoes and yams are done. No butter. It is very yummy.
add sour cream or cream cheese to the mash instead of butter
if you don’t have either of those, make gravy for the mash
cut the potatoes to the size of quartered red potatoes, drizzle with olive oil, kosher salt, black pepper, and rosemary. mix well, and pour onto foil lined baking sheet. bake in 350 oven for approx. 20-30 minutes or until golden brown checking with fork for tenderness.
Use cottage cheese instead of butter and add some shredded carrots.
You can use canned chicken broth or sour cream in place of the butter. One of my favorites is – don’t mash the potatoes completely (leave them chunky) and add s&p and mayo.
Or
Rice.
