What recipes do you suggest that involve soy milk and almond flour?
I have in my pantry almond flour, soy milk, various other flours (including quinoa, tapioca, all-purpose and corn), nonhydrogenated shortening, vanilla and almond extracts, canola oil, baking powder, baking soda….
Do you suggest any recipes that are limited mostly to these ingredients? I’m craving something sweet, of course. ![]()
And NO eggs or egg substitutes.

Anything that needs milk and flour in it. Look through your cookbooks and google anything that you are in the mood for baking.
try pancakes
175ml soya milk
175ml water
175g plain flour
2 tablespoons of chickpea flour
1 teaspoon of baking powder
1tablespoon sunflower oil
pinch of salt
place all the ingredients in a bowl and mix till smooth and no lumps,cook and serve with lemon and sugar, golden syrup or jam
you can make chocolate chip cookies! (or any variation of a cookie) would work really well. try typing in “veganomicon” into google, they have some good vegan recipes. just click on the desserts section.
Almond Jelly that go with fruit cocktails.
Ingredients (makes 32)
° 12g agar-agar powder
° 500ml water
° 50g sugar, or to taste
° 1 litre fresh soy milk
° a few drop of almond essence or almond powder mix with water, to taste
° 2 cans longan
Method
1. Dissolve agar-agar powder in 500ml of water in a pot. Add the sugar and bring to a boil.
2. Remove pot from heat, stir in the soy milk, almond essence and mix well.
3. Pour the agar-agar mixture into the jelly mould and leave to cool before refrigerating until chilled.
4. Mix with 2 cans of longan, ice cubes in a large salad bowl. Serves chilled.
