i have a project and i wanted to choose lima beans a radish or mint but there taken so i need help to figure this out.

Mustard seeds,you can just put the seeds on top of the soil and they will start growing the very next day.Add some fertilizer when you water and within 2 weeks you will have a plant around 2 feet tall,oh yes they need strong sun a few hours a day.
Sweet peas will sprout in the matter of days . They grow fast enough we get 2 plantings in a season here in Maine… GL
