White vinegar (or distilled vinegar) is a solution of acetic acid in water. The chemical formula for acetic acid is C2H4O2 (structural formula is CH3-COOH).
The acid could be extracted by distillation, where the vinegar is boiled at a temperature that vapourises the water but allows the acetic acid to condense (it has a higher boiling temperature than water). Care must be taken though, because concentrated/pure acetic acid is corrosive, flammable and potentially explosive.
