What is the difference between chocolate “candy melts” and regular chocolate?
What exactly is the difference between the chocolate candy melts (like Wilton) and real chocolate? I notice that the candy melts don’t taste the same as regular chocolate.

Chocolate has a lot of milk in it, chocolate candy melts probably contain just a small amount of chocolate… ie are just chocolate flavored.
Candy melts are made specifically for making home made candies. You can melt them down, pour them into molds (shapes), and they will re-set. It could be the shortening content. They may also have less cocoa powder in them.
Winton is not real chocolate, it’s a candy or confectioners coating. Real chocolate is cocoa butter based while the Winton candy melts are vegetable oil based. The cocoa butter is what makes the big difference in taste. A lot of hobbyists think they are using real chocolate when the are doing their holiday candies with “candy melts”, but real chocolate requires tempering and very careful temperature control, were as confectioners coating (like the melts) can be just melted and used.
