What is the differance between light brown sugar and dark brown sugar?
I plan on making a pecan pie and right now all I have is light brown sugar. I just wanted to know is there really a differance besides the color?

Drak brown sugar has more molasses in it than light brown sugar.
The dark brown sugar has more molasses in it. If you need dark, can add 1 tbsp mild blackstrap molasses per cup of light brown sugar.
I’ve baked with light brown sugar and tastes good. When I ran out of it, I made my own using 2 tbsp mild blackstrap molasses to one cup white granulated sugar. Mix thoroughly with a fork. The recipe comes out more tasty and moister, so haven’t bought brown sugar since (months ago).
I dont think there is much difference with the taste the dark brown sugar might have a little stronger flavour, I think it is more to do with the appearance of the colour of the finished dish. The light brown sugar should be fine, I tend to use this most when I cook.
