What is the best chocolate to use in a chocolate fountain?



I have a small chocolate fountain and wondering what is the best chocolate, someone had said there needs to be a high cocoa content in it.

try googling a chocolate fountain thing and see what pops up in your search. that’s mostly what I do when I have a tough question.

I’m not sure what it’s called exactly, but if you go Michael’s (the craft store) they have REALLY good chocolate for chocolate fountains.

That’s right, a high cocoa content is crucial. It also suggests in my instruction leaflet that if using regular chocolate add some oil (olive, sunflower etc) which gives the melted chocolate more consistency

you don’t want to have too high of cocoa content because the chocolate has difficulty melting (it can clump up rather than become a silky ganache type texture that you want). i would say you probably want to go with a milk chocolate to avoid the risk of having clumpy chocolate.

also be sure to melt the chocolate using a double boiler (boil water and place a heat tolerant bowl on top with the chocolate inside the bowl) and stir it to melt. chocolates with high cocoa content will have higher difficulty melting that those with slightly lower content (such as milk chocolate). this is just my advice. i haven’t used a chocolate fountain, i just make my own chocolate ganache by hand.

just remember that some fountains need the chocolate to me partially melted before you start the fountain movement, you can’t expect the fountain to melt it all!
