You buy split peas, there are no skins. Here is my recipe; l piece bone in picnic ham, 4 bay leaves, l pound dried split peas, washed and picked clean of any debris. l t. dried thyme, 2 T olive oil, 2 medium onions, chopped, 2 medium carrots, chopped 2 stalks celery, chopped 1 T unsalted butter, 2 medium cloves garlic, minced, pinch sugar, 2 scrubbed new potatoes diced about 1/2 inch, ground black pepper. Boil ham hock, add split peas, cook for 45 minutes. In separate pan cook all veg tables until done, 30 min. Add veg tables to ham and peas, simmer, uncovered until peas have dissolved and are consistency of light cream, cook about 20 minutes more season with ground black pepper, serve with balsamic vinegar if desired.
