what happens when you substitute rice noodles with italian noodles on a stir fry?
I’m having ppl over and want to make fried noodles with veggies in a brown sauce. I couldnt find the chinese noodles, can I substitute for regular pasta? How will it affect the flavor?
How about egg noodles and regular pasta noodles on a stir fry. Would that work the same?

it will change the texture and yes the flavour.. but im sure it might work but your better off using rice
The main difference in my opinion is that rice noodles are more glutinous and have a different texture. I love them in Chow Fun noodles. I would use a linguine and be sure to pan fry them ot get them a little brown and to bring out the starch, then add veggies and finish with the sauce.
The flavor is totally different, even the stiffness.
The closer wheat pasta option is the type known as “capelli d’angelo” (angel hair), which is very thin.
