What does the addition of sour cream DO to cake batter?



I’ve seen several recipes for homemade vanilla cakes with sour cream in the batter. I know that sour cream is often an ingredient in coffee cakes, but I’d like to make a moist, lighter birthday cake, not a coffee cake. Are cakes with sour cream automatically dense coffee cakes? What is a cake made with sour cream like?

Yep sour cream will make a cake more moist and dense. It will keep better too.

You want to look for a genoise sponge or Victoria sponge recipe if you want a light cake. Otehrwise just a simple butter cake (easier than a sponge)

chocolate cakes with sour cream are really flavorful and keep well in the fridge.. they will keep their moisture well though then tend to be a slight but denser.

i dont know now how light your shooting for but try angel food or chiffon or sponge if you want a light but less flavorful cake.

I add sour cream to my chocolate cake, it doesn’t make it too heavy, just very moist and delicious!
