What does sour cream do in baking recipes?



Some recipes I have in a baking cookbook call for sour cream. What exactly does sour cream do in the recipe?

adds moisture and richness

It increases the acidity, which is good if you want some tartness, but it also helps create the right chemistry for things to rise in the oven.

Well if you are meaning for cakes, etc. It brings a fabulous extra moistness and tang to it..it is a very good addition.
