What can I make with Eggplant?
I have very limited ingredients. I am pregnant and went to a farmers market where I found an eggplant that looked very good. :p I have never made eggplant before and am looking for a dish or snack that tastes good and where the main ingredient is eggplant.
Here is an example of my available ingredients:
Chicken broth
Beef Gravy
Fresh tomatoes
Bisquick
Flour
Sugar
Fresh green tomatoes
green beans
cream corn
sweet potatoes
canned cranberry sauce
pumpkin pie filling
Again, any advice would be greatly appreciated.

you can treat an eggplant almost like chicken. You can peel it and dice it up. You can slice it into round circles and make an eggplant parm.

you can omit the zucchini and use fresh tomatoes instead of canned.
Eggplant Parmesan is really good too.

Just batter dip it and fry..dip in ranch or sprinkle with parmesan chees..YUM!
