What are some substitutes for butter or margarine?
I’m making a batch of cookies and the recipe calls for 1 stick of margarine or butter but i don’t have any of that except a fraction of a tub of Parkay. The recipe is for cookies that you DON’T bake, so I can’t use eggs or shortening or stuff like that.

oil, canola oil is best for baking!
use some kind of fruit juice
Well I looked at my notes from class (I went to culinary school) and it says:
Substitutions
If you don’t have – - – -> Try this
Butter (1 cup) – - – - –> Vegetable oil (scant less than 1 cup)
To be honest I would use Canola oil because its healthier
Can use applesauce or pureed fruits as substitution or partial substitution to margarine or butter.
I use applesauce or pureed fruits such as peaches (drained) as partial substitution in baking cookies, cakes, etc. instead of the full measurement of butter or margarine.
