Mom’s Chinese Walnut Chicken — Use low sodium soy sauce only. You can also add more sugar if yo uwant it sweeter.
2 lbs boneless skinless chicken breasts
3 tablespoons cornstarch
3 tablespoons oil
2 tablespoons low sodium soy sauce
1 pinch sugar
1 teaspoon garlic powder
1/2 teaspoon ginger powder
1 cup walnuts, chopped or broken into large pieces
3/4 cup water, warm
1/2 cup soy sauce
1.Make sure to start your rice before starting the Walnut Chicken!
2.Cut chicken into half-inch pieces.
3.Mix 3 T cornstarch, 2 T of the oil and 2 T soy sauce in the bottom of a large bowl (add more soy sauce if needed, until the cornstarch is smooth and semi-liquid).
4.Add the sugar, garlic and ginger powder and mix.
5.Add the chicken and stir to coat. Put aside.
6.Heat 1 T oil in a large frying pan. Fry the walnuts until they are golden brown. It takes a while to get the nuts up to temperature, but then they brown very rapidly.
7.Move the walnuts to a separate bowl.
8.Put the chicken in the heated frying pan and stir-fry for a couple of minutes, until the pieces are separated.
9.Add the nuts to the chicken and stir-fry for a couple more minutes.
10.Add the warm water and 1/2 C of soy sauce to the pan and stir to make a sauce.
11.If more sauce is desired, just add additional water and heat.
12.Serve hot with rice.
I felln love with it on shrimp.I asked on here and of course YA came thru for me.
I adapted the recipe a bit when I made it nd I make mine with shrimp but just use bite sized chicken ieces instead of the shrimp.
Walnut shrimp:
1 tsp salt
1 pd shrimp-shelled and deviened
2 egg whites lightly beaten
1/4 cornstarch
1/4 tsp baking soda
1/4-1/2 tsp garlic powder
4 cups oil for frying
1 tsp oil
1/2 cup sweetened condensed milk
1/3 cup mayo
3 tsp lime juice
2 tsp lemon juice
1/2 cup cadies walnuts
Place to cups warm water in a bowl, add the salt and the shrimp. Give it a little swirl . Leave for 4-5 min then drain and rinse in cold water and pat dry.
Start heating to oil in a large pot.
Mix the egg white, cornstarch, baking soda, garlic powder, and the 1 tsp oil. Whik into a smooth, and kind of thin paste. Becare ful not to do this so soon or the cornstarch will thicken to much.
Add the shrimp to the cornstarch and set aside for a min.
Mix the condensed milk, mayo, lemon and lime juices. Mix until smooth and then set aside.
When the oil is about 375 drop the shrimp in one by one, fry until golden brown . Drain then add to the sauce and toss.
