Vegans/Vegetarians: Have any of you tried Tabouli? It’s a delectable salad, and would like to share. ?

Serves 4-6
3/4 cup boiling water
1/2 cup cracked wheat or fine bulgur
1/2 cup minced parsley
1/4 cup minced mint leaves
1/2 cup finely chopped green onion
1 tomato, diced
1 cucumber, seeded and diced
3 tablespoons olive oil OR oil substitute (fatfree Italian dressing, liquid from cooking chickpeas*, or reduced vegetable broth)
2 tablespoons lemon juice, or to taste
1 tsp. sea salt, or to taste
Pepper to taste
Pinch allspice
Pour boiling water over the cracked wheat, cover, and let stand about 20 minutes until wheat is tender and water is absorbed. Add the chopped vegetables and toss to mix. Combine oil or substitute, lemon juice, salt, pepper, and allspice. Add to wheat mixture and mix well. Chill. Serve and enjoy.

Thanks for the recipe. I love tabouleh and most Middle Eastern food. I can tell your recipe is gonna be good but I don’t like that much mint so I will keep it light on that ingredient.

The Tabouleh I know is a Minced Flat Leaf Parsley Garlic Salad with Bulghur and Tomato rather than a Bulghur Parsley Salad. In other words it is more Parsley than Wheat. Most Americans get that proportion reversed for some reason.
In the Middle East it is seasoned with really excellent Olive Oil — an emerald green one with real olive flavor — and freshly squeezed Lemon Juice, Sea Salt. And that is all. .It is usually served with Hummus and Dolmas, or Ylanchi Sarma, Red Onion Wedges and Pita and Kalamata or Alphonso Olives. Yum!

My dad used to make this when I was a kid. I have wanted to try it, but could not find the cracked wheat for it. I know he must have gotten it at the plain old grocery store! Where/what aisle is the cracked wheat on? They used to sometimes sell little bags of it in the produce section, but I have not been able to find it? I would love to make it. Thanks.
I like tabouleh as well, I just can’t seem to get into it if it’s by itself. But wrapped in a pita with some hummus and grilled veggies and it’s fantastic. Middle Eastern foods are my 2nd favorite, for sure. Right after Mexican

That’s an awesome recipe!!! Thank you so much. I discovered Tabouli about two years ago and truly enjoy it. It’s been a welcome addition to my diet:)
Tabouli is also tasty made with millet or quinoa or cous-cous or orzo pasta instead of bulghur. In France, they make this odd tabouli out of cous-cous, mixed cooked vegetables (often frozen vegetables), a little bit of parsley, and a vinaigrette dressing. It’s not authentic, but it’s a pretty good, inexpensive everyday salad.
