Vegan Muffins made with Molasses?
I want to make some Vegan muffins however I only have gold whole wheat flour, rice milk, safflower oil and most other ingredients but I do not have much honey. I have A LOT of molasses…is there a muffin recipe that uses only molasses? Or, can I transform a regular vegan recipe into a molasses recipe. Also, I do have bananas, pumpkin, blueberries and such.
Thank you but I already found a recipe for banana muffins. I used half honey and have molasses. I do not care too much about honey being from bees. It actually is pollen and is said to be very good for you. I am just vegan because I care about my health and corn syrup is not good for anyone at all.

Muffins sweetend w/ ONLY molasses will be pretty darn strong in flavor. I’d suggest a blend of honey (oh yeah, you’re vegan… corn syrup then) and molasses.
