Vegan empanada dough?



Does anyone have a recipe for vegan empanada dough? So far all of the recipes I have found call for butter and/or eggs and/or lard.

Could I perhaps use water and vegetable shortening?

Please help!

Shortening will work fine–use a little less than you would for a pie crust. And water works as well. Use ice water and handle dough as little as possible so it will stay tender. Good Luck!

1/2 cup oil
5-1/3 cups flour
2 tsps dry yeast
1-1/2 tsps salt 1-1/2 cups warm water

in a large bowl, mix the flour and the dry yeast. dissolve the salt in the warm water and add the water to the flour. turn the dough onto a floured surface. gradually incorporate the oil, kneading in about 2 tbsps at a time and adding more flour as necessary. place the dough in a large oiled bowl, turning to coat. cover and let sit in a warm spot for 12 hours, or overnight.
