Oops, I was gonna answer this, but being southern, I wouldn’t know how to do low fat bean and rice recipes, but if you want to walk on the wild side, email or messenger me, I have some awesome recipes for you
You can make delicious indian gravy curries with the beans and serve them with basmati or jasmine or any other rice.
the simplest is rice with a can of beans poured over and microwaved! You can use black beans, kidney beans, garbanzo beans, go crazy!
To kick it up you can mix in as much red or green salsa as you want.
Or you can recreate the chipotle burrito bowl at home- add lettuce, avocado, tomato, chopped onion and peppers to the above. Avoid boxed rice and bean meals as they are loaded with sodium.
I just made this tonight, it’s my favorite.
Make a pot of rice of choice (I use basmati, 1 cup rice, 2 cups water).
In a large pan in about 1 Tbsp. olive oil, saute 1 chopped red onion, some minced garlic, and half a chopped red bell pepper. When the veggies are soft, add a can of black beans. You can drain and rinse them, but I don’t. And then 1/4 cup vinegar (I used red wine vinegar this time) and about 10 dashes of your favorite hot sauce. A little salt and pepper to taste and let simmer a bit. Then toss in the pot of rice and stir well. Add some chopped cilantro and you’re done.
It’s good on its own, but even better stuffed inside the enchiladas I made tonight.
Yeah, I’m a Southron as well. I was going to tell you how to make red beans and rice, but I don’t think anyone would consider that low-cal.
