Proven recipes for pinto beans?



I learned at my last doctors visit that I am pre-diabetic. So, a change in diet is in order.

My husband loves pinto beans and I have found out that they are really good for diabetics. So I would like to find some different ways to use them in our meals.

I’ve found some recipes online, but I would really like some proven recipes that are really good. I tried the pinto beans and ham bone with onions and cornbread and it was good. Salt is a no no in our house as well.

I would love to get some input! Thanks!

The white beans we use in this chili are white pinto beans. Hope you like it.

White Bean Chicken Chili

Prep Time: 10 Minutes
Cook Time: 25 Minutes
Ready In: 35 Minutes
Yields: 9 servings

INGREDIENTS:
2 tablespoons vegetable oil
1 pound diced, cooked chicken meat
1 onion, chopped
2 cloves garlic, minced
1 (14.5 ounce) can chicken broth
1 (18.75 ounce) can tomatillos, drained and chopped
1 (16 ounce) can diced tomatoes
1 (7 ounce) can diced green chiles
1/2 teaspoon dried oregano
1/2 teaspoon ground coriander seed
1/4 teaspoon ground cumin
1 (15 ounce) can white beans
2 ears fresh corn
salt to taste
ground black pepper to taste
1 lime, sliced

1. Heat oil, and cook onion and garlic until soft.
2. Stir in broth, tomatillos, tomatoes, chilies, and spices. Bring to a boil, then simmer for 10 minutes.
3. Add corn, chicken, and beans; simmer 5 minutes. Season with salt and pepper to taste.
4. Serve with these toppings for people to choose from: limes, cilantro, cheese, avocado, sour cream, and tortilla chips.

PINTO BEAN CASSEROLE

1 lb. hamburger
2 tsp. Worcestershire sauce
1/3 c. chopped onions
3/4 tsp. salt
2 tsp. chili powder
1 tsp. oil
2 c. canned pinto beans
2 canned tomatoes

Brown hamburger in oil, drain and add onion, Worcestershire sauce, chili powder and tomatoes. Simmer 15 minutes. Add pinto beans and pour into baking dish.

TOPPING:

2 tbsp. flour
10 tbsp. cornmeal
1 1/2 tbsp. shortening
1/2 c. buttermilk
1 egg, beaten

Mix well and pour on top of bean mixture. Bake 20 minutes at 435 degrees. Serve with slaw or salad.

PINTO BEAN SALAD

1 c. diced peppers
1 c. diced onions
2 c. tomatoes
2 1/2 c. mayonnaise
2 cans pinto beans
1 sm. skillet corn bread

Crumble corn bread in pan, then put pinto beans on top of corn bread. Mix peppers, onions, tomatoes, and mayonnaise and place on top of beans and corn bread.

This is just a plain but really good pot of beans:

2tbsp olive oil
Several cloves garlic, sliced
1-2 onions or leeks, chopped
2 or more jalapenos, chopped

Saute these ingredients in the bottom of a heavy pan until soft and a bit browned. Add and cook a couple minutes more:
1 can crushed tomato
2 tbsp yeast

Add your pre-soaked pinto beans (2 C dry) and broth or water to cover. You get the most flavor with broth, so I recommend the canned low-sodium version. Use 2 cans of broth and water to make about 6 C liquid.

Add 1 tbsp dried oregano, and pepper to taste.

I cook this in my pressure cooker and it takes about an hour. In a conventional pot, bring to boil and simmer until beans are soft.

I serve with homemade tortillas and grated cheese.

BLUE RIBBON PINTO BEANS

1 pound bag dried pinto beans
salt (to taste)
canola oil
large onion, chopped

Look Pinto Beans and remove rocks and imperfect beans, wash well and drain. Place in large boiling pot with a good thick bottom, like a dutch oven.

Important: Do not presoak beans!!

Cooking in this way will cause them to become a beautiful reddish color in a thick soup.

Place beans in a pot of water filled almost to the top. Bring beans to a boil and reduce heat to medium/low. They will continue to cook and you will have to add more HOT water until beans are tender. When tender, add salt to taste, 2 tablespoons canola oil and one large chopped onion.

Continue to simmer…as soup begins to thicken you may have to lower temperature. Be sure that there is an adequate amount of water, cooking down to make a thick red soup.

When done, (about 3 hours later) cook the juice down. You can remove the lid when the beans are done and turn the temperature back up to cook down the soup. Once you try this method of cooking pinto beans, you will never presoak again!

PINTO BEAN PIE

1 c. pinto beans
1 1/2 c. coconut
1 c. chopped pecans
4 eggs, beaten
2 sticks butter, melted
3 c. sugar
1 tbsp. vanilla

Mash pinto beans well with fork. Mix other ingredients with the beans. Pour into 3 unbaked pie shells and bake at 300 degrees for 45 minutes to 1 hour. Everything is good with chocolate, so I drizzle melted chips over top, as a decoration too.

I now realize you mentioned diabetic, sooo probally not a good idea for your household, but maybe splenda could be substituted. Just like to be different and thought this would be off the beaten path.

Soak dry beans overnight. Drain and put in crock pot. Add chopped onions, good beef sausage and can of Ro-Tel tomatoes. Also low sodium beef broth.

Don’t limit yourself to pinto beans. All beans are high in fiber and, depending on what they are combined with, very healthy.
Be aware that they can cause bloating and gas. I recommend putting a t. of baking soda in the water when you are cooking them. Also, I keep Beano on hand for those healthy, but gassy, meals like beans, or sauteed cabbage.
Try this:
CUBAN BLACK BEANS AND RICE
Cook a pot of rice.
While rice cooks, brown a pound of good quality, lean bulk sausage (I use Jimmy Dean) in a large skillet.
Into the browning sausage, add a small chopped onion.
When the sausage is brown, put it into a colander in the sink and pour scalding water over it to get rid of excess fat.
Put it back into the skillet, add 2 cans black beans and about 1 t. chopped garlic. Fill each can half way with water and scrape out all the juice and add to the skillet.
Simmer about 20 minutes while rice cooks, stirring to keep from sticking.
This is an impressive company dish as well.
Line the edges of a shallow casserole dish with rice. Pour the bean and sausage mixture in the middle. Decorate the corners with salsa. Add some cilantro or parsley for garnish.
Serve with corn sticks.
The leftovers are awesome! I always double the recipe just so I will have extras.
Mix the leftovers together.
Put serving sizes in ziploc freezer bags. Flatten and stack in the freezer.
When you want a quick nutritious meal, take one out, poke a couple of holes in the plastic, nuke about 1 1/2 minutes.

Pinto Bean-Apple Cake
1 c. honey
1/4 c. canola oil or applesauce
1 egg
2 c. mashed pinto beans
1 t. ginger
1 t. cinnamon
1/2 t. salt
1 t. soda
1 c. whole wheat or spelt flour
2 T. white bean flour or regular flour
1/2 t. cloves
1/2 t. allspice
2 t. vanilla
2 c. grated apples
1 c. raisins
1 c. chopped nuts

Cream honey, oil, egg and mashed beans. Add remaining ingredients and pour into 10″ tube cake pan or 9 x 13 cake pan that has been sprayed with a non-stick coating. Bake at 375 for 45 minutes.

Also, all bean flours are so good for you and can be added to anything using flour, cookies, breads, etc. If you use a little, you can’t taste it. I love adding white bean flour to soups and stews instead of cornstarch or flour. It thickens beautifully and no one knows.
