Oven fried chicken?
I’m making it for dinner and I have a good recipe that uses flour and bread crumbs for coating. I’m thinking of adding some parmesan cheese to the mix for a different flavor. What do you think?
What else would be a good addition?
(Other ing. are salt, pepper, garlic & paprika)

parmesan cheese, garlic & herb powder, some black pepper, olive oil
use season salt instead of regular salt. it will put your chicken in another league!
I do it all the time, turns out great. Do they have the mixture spices “Italian Seasoning” in your area? Try adding a little of that as well, you are probably going to like it. My company loved it.

Oven Fried Parmesan Chicken
Ingredients:
1 cup soft fresh breadcrumbs
1/3 cup Parmesan cheese, grated
2 tablespoons parsley, finely chopped
1/2 clove garlic, peeled and finely chopped
1 teaspoon salt
1/4 teaspoon black pepper
3 ounces butter or margarine, melted
2 1/2 pounds chicken pieces
Directions:
Preheat the oven to 400F. Butter a large baking dish.
In a shallow bowl, combine the breadcrumbs, cheese, parsley, garlic, salt and pepper. Place the melted butter in another shallow bowl.
Dip the chicken into the butter, then roll the pieces in the crumb mixture and put them into the baking dish.
Pour the remaining butter evenly over the chicken and bake, uncovered, for 35 to 40 minutes or until done, basting occasionally with the pan juices.

I like to use taco seasoning mix with the breading. Other good additions are ranch dresssing mix & Italian dresssing mix. My husband’s favorite was using an envelope of onion soup mix..

You can add anything to flour & bread crumbs…if you like a little “kick” to your chicken, add things like chili powder, curry powder, or cummin. Lemon zest & garlic are great also. Any dried herb will work.

Lemon pepper, or season salt will also taste good when seasoned on the chicken, were you going to add the parmesan cheese, on top of the chicken once its been baked? I think that would be good too.
Homemade Shake & Bake Chicken (Adjust ingredients accordingly to baking a whole cut up fryer)
1/2 c. flour 1 tsp. paprika
salt & pepper 1/2 tsp. garlic powder
1/2 tsp. dried thyme 4 chicken leg & thighs
1/2 c. milk
Preheat oven to 375. Combine flour, papriks, salt, pepper, garlic powder, & thyme in a plastic bag.
Dip chicken in milk, shaking off excess. Add to bag and shake to coat evenly. Placed chicken on greased baking sheet. Bake 40 minutes, until chicken is tender & coating crisp.
Some bread crumbs have parmesian cheese in the mixture, so I would say go ahead.
Sure … I add different spices/herbs all the time to the batter! … Here are some other choices: chili powder; Creole seasoning (Tony Cachere’s); oregano – basil – thyme. Also try using Italian seasoned bread crumbs sometime; or Panko; or even dry potato flakes (just don’t use them to actually make potatoes with:)… and if your store carries Dixie Fry coating mix, it’s the absolute best! It’s near the Shake & Bake, but isn’t crumbly like that. The crust puffs up and tastes like fried chicken…
probably too late now, but I use that Tony’s Chachere’s cajun (creole) seasonong and garlic powder and parsley flakes on everything. I don’t coat mine in flour……..hmmm….why do you coat yours in flour? dinner sounds good!! Were having grilled boneless porkchops and purple hull peas and sweet potato’s for dinner
