New food options for babies w/ food allergies?

I have 14 month old triplets with food allergies. Some are more sensitive than others, but since it’s impossible to keep it separate, we only give them the same foods.
The allergies are to peanut, egg white and milk.
I’m really concerned about what kind of nutrition they’re getting w/o these things. I use soy milk, but I know that produces estrogen, but rice milk doesn’t have as much protein. Protein is a real concern for me, since they won’t eat any meat (except hot dogs, which I refuse to let my husband feed them more than once a week…it’s not real meat)! I feel like I’m giving them beans (legumes) every day, and sometimes twice a day. They’ll eat any fruit I put in front of them (some more than others…apples and pears are not that popular). They will only eat peas, sweet potatoes, avocado canned green beans, and canned carrots (as well as corn, but that’s a grain not a veggie). They used to eat squash, but are refusing it now.
Since they’re old enough, I want to feed them things they can feed themselves. It becomes quite tedious to constantly spoon feed all 3 of them. And they’re starting to reject things they can’t feed themselves.

Any suggestions on new things to feed them? I do use an egg re- placer in my baked goods (of which they will only eat blueberry muffins and occasionally pancakes). We’ve tried Sunbutter, but they’re not that interested. And we are on a budget with 3.5 kids and only one income. And it can’t get too involved, as they do need more supervision (so they don’t kill each other). Nothing too exotic or costly, please!

Just follow what your childs doctor says. There is a reason why they have to go to school for so long to become educated. And..your not going to be the 1st parent that is over reative when it comes to there kids so start a list and take it with questions for the dr. in mind.
