6 (8 ounce) sweet potatoes
1 1/2 tablespoons prepared horseradish
2 tablespoons honey
2 tablespoons butter or margarine
1/2 teaspoon salt
1/4 cup heavy cream
DIRECTIONS
Preheat the oven to 400 degrees F (200 degrees C). Place potatoes on a baking sheet and bake for 40 to 50 minutes, until tender enough to easily pierce with a fork. Cool slightly and remove peels.
Place the cooked sweet potatoes into a large bowl and mash with the horseradish, honey, butter and salt. Whip with an electric mixer until light and fluffy, adding heavy cream as needed to get the texture you desire. Serve immediately, or keep warm in the oven until time to serve.

“Once you taste this, you won’t ever go back to the marshmallow-topped variety! I have peeled and cooked in the microwave, and also boiled the sweet potatoes. They taste the same no matter how you cook them. So, use the technique that works best for you!”
INGREDIENTS
5 sweet potatoes
1/4 teaspoon salt
1/4 cup butter
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 cup white sugar
2 tablespoons heavy cream
1/4 cup butter, softened
3 tablespoons all-purpose flour
3/4 cup packed light brown sugar
1/2 cup chopped pecans
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×13 inch baking dish.
Bake sweet potatoes 35 minutes in the preheated oven, or until they begin to soften. Cool slightly, peel, and mash.
In a large bowl, mix the mashed sweet potatoes, salt, 1/4 cup butter, eggs, vanilla extract, cinnamon, sugar, and heavy cream. Transfer to the prepared baking dish.
In a medium bowl, combine 1/4 cup butter, flour, brown sugar, and chopped pecans. Mix with a pastry blender or your fingers to the consistency of course meal. Sprinkle over the sweet potato mixture.
Bake 30 minutes in the preheated oven, until topping is crisp and lightly browned.

Good lord, people… horseradish in sweet potatoes? Are you guys serious?
Just keep it simple. Save yourself some time and buy several cans of sweet potatoes / yams (they’re technically very different, but the words are used interchangeably). Drain about half of the liquid and put them in a casserole dish. Sprinkle with a lot of brown sugar and some cinnamon, then put them in the oven (around 375 is fine). When they start bubbling, cover them with marshmallows and continue cooking until the marshmallows brown. YUMM!
