low fat, high fiber, preferably vegetarian recipes?



My husband and I are trying to stick to a high fiber, low fat diet… I’m not a big meat eater.. and trying to wean him off of the meat as well… at least red meat (ick) … i do enjoy chicken sometimes, though.

Can anyone give me some low fat/high fiber recipes to keep our meals interesting? We’ve been eating tons of salads, vegetables and fruits and beans (especially lentils! Theyre sooo high in fiber, and delicious!)

any ideas to make oatmeal not so blah?

I’m a Cross country runner, While i personally wouldn’t recommend a vegetarian diet i will tell you what you need to do in order to keep healthy.
1)if you choose not to eat meat, eat plenty of nuts and peas.
2) Exercise for about 20-60 minutes a day, running will do you best because it gives you a higher oxygen content, and makes the heart flow easier
3)As humans we are natural Omnivores, so at least twice a week eat a card deck sized piece of meat to keep the body pleasure chemicals moving,trust me you can’t go without meat in the long run, even a little helps.
4)eat celery for the first few weeks. it is high in fiber, burns more calories than it provides, and each celery stick can burn about 2 Big Macs of calories. It should help clear your colon so that you feel more active and lighter.

I am not a professional at health but being a Cross country run has taught me what is essential to the body.

P.S melon colly is a great replacement for candy.
