Im making my new “friend” dinner this Saturday what kind of meat should I make to go with dinner (see below)?



I am making baked Macaroni and cheese from scratch, candied yams and biscuits. but I need a meat. I was thinking maybe fried chicken. but I really dont want to fry and have him eat greasy stuff. should I do grill chicken? if so, know a recipe?

otherwise what should I make with these dishes? thanks much

Ham would go great with those sides! And no frying!

I agree with nicole – ham.

a pork roast yummy…
season it with lots of garlic and bake on low maybe 275 for about 6 hours it will be very tender like pulled pork..

even baby back ribs would go great with this too…. cook the same way as the pork roast..

honestly I would say country fried steak

Country fried steak

2 pounds boneless round steak
Salt
Pepper
Spices (what ever you have available)
Beef tallow or grease
1 quart buttermilk
1 cup flour

Cut steaks 3/4-inch thick. Pound the steaks with meat tenderizing hammer until about 1/4-inch thick. Season with salt and pepper, to taste, and rub on other spices if you have them.

Start heating beef tallow or grease in Dutch oven. Be sure you have enough grease in the pan to cover the steaks (at least 1-inch.) Put the buttermilk in bowl and put the flour on a plate. Wet the steaks in buttermilk and then drag through flour making sure both sides have flour on them. If a thicker crust is wanted, then repeat this procedure again. When grease just begins to smoke, then you are ready to drop in a steak and cook. Cook steak until golden brown on both sides turning steak in grease, if needed. Repeat until all steaks are cooked.

Yeah I was thinking ribs..that sounds good :o ) Kinda messy..but men love that stuff.

The best thing to go with mac and cheese is minced meat. Here’s the recipe

1. Take the pan you’ll use and add some vegetable oil (about 3 table sp. for 1lb of minced meat )
2. add some chopped onions, garlic, ginger, powdered cinamon (a little bit), salt and some black pepper (if you like spicy then add a tea spoon full other wise make it half a teaspoon)
3. If you want to get the kick as the restaurants then add half a tablespoon sugar (trust me)
4. Add a little (about a cup for 1 lb meat) water
5. Cook for 30 minutes (give it a stir every 3-5 minutes to make sure the meat is not that chunky)
6. if you want add canned kidnet beans
7. Add some sliced tomatoes and cook for 10 more minutes
8. Ready to serve, garnish with cilantro

You could do baked chicken. Put it on a bread pan with a little oil after you boil it and roll it in flour can be healthy and tasty. I would recommend a Pork roast wchich is easy. In a large casserole dish put the roast after boiling for about 25 minutes and put a can of whole peeled tomatoes, Small white potatoes and about half an onion along side allow to cook at 350 for about 15 minutes add some mild banana peppers and sprinkle with parsley, Not only will it taste good it will look good. Maybe the way to your”friends” heart is through their stomach.

I’d go with pork.
You could grill or broil some chops and not have to worry about a big roast or frying. I would probably go with a simple bbq sauce on the grill or just salt, pepper and a little sage, pan sear them and finish in the oven. In a perfect world I’d get them from my butcher and have them cut thick as well.

If you’re worried about “greasy” try this maybe:

BBQ Salmon

1/2 cup Barbecue Sauce
2 Tbsp. brown sugar
1 green onion, sliced
4 salmon fillets or steaks (1 lb.)

PREHEAT greased grill to medium-high heat. Mix barbecue sauce, brown sugar and onions until well blended.

GRILL salmon 4 min. on each side. Brush generously with the barbecue sauce mixture. Continue grilling 2 to 4 min. or until salmon flakes easily with fork, turning occasionally and brushing with the remaining barbecue sauce mixture.

And for a more traditional menu, I agree with other posters a baked ham would be great, buy a canned ham, make a glaze of mustard & orange juice, and stud the ham with cloves after cutting a criss cross pattern on it.

Or, BBQ ribs, or chicken, as others have also posted.

P.S. Where are the greens? In case you wanted to add them , here’s a recipe:

Collard Greens

1/2 pound smoked meat (ham hocks, smoked turkey wings, or smoked neck bones)
1 tablespoon House seasoning, recipe follows
1 tablespoon seasoned salt
1 tablespoon hot red pepper sauce
1 large bunch collard greens (you could use kale, turnip greens, mustard greens here too)
1 tablespoon butter

In a large pot, bring 3 quarts of water to a boil and add smoked meat, house seasoning, seasoned salt and hot sauce. Reduce heat to medium and cook for 1 hour.
Wash the collard greens thoroughly. Remove the stems that run down the center by holding the leaf in your left hand and stripping the leaf down with your right hand. The tender young leaves in the heart of the collards don’t need to be stripped. Stack 6 to 8 leaves on top of one another, roll up, and slice into 1/2 to 1-ince thick slices. Place greens in pot with meat and add butter. Cook for 45 to 60 minutes, stirring occasionally. When done taste and adjust seasoning.

Serve with favorite dish as a side.

House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Mix ingredients together and store in an airtight container for up to 6 months.

I like fried chicken but sometimes I just don’t want to fry either. Besides being greasy it makes the house and your clothes and hair smell like grease.
I just make oven fried chicken. It’s less work anyway.
I’ve seen all kinds of oven fried chicken recipes with different things as the breading. Regular flour, crushed cornflakes, dry mashed potato flakes etc. Do they still make “Shake and Bake”?
Here’s a pretty simple one……..

OVEN FRIED CHICKEN

8 boneless skinless thighs
2 tbs paprika
2 cups flour
2 tsp salt
1/4 tsp garlic powder
1/4 cup butter or marg.

Combine all ingredients except chicken and butter. Put butter in 9×13 inch oven baking dish and melt.

Coat chicken with dry mixture and place in pan with melted butter.

Cook at 425 for 20 min. Remove from oven and turn chicken over.

Cook for an additional 20 min at 425.

You got some good suggestions for meat – Ham is great, but, the two others – “Minced meat” and “Country Fried Steak” sound even better for something different!

Something grilled and smoky-flavored would be awesome with those sides. A grilled ham steak or salmon would be great for two.

A simple grilled chicken marinade that would go well:

splash of white wine vinegar
the juice of 2 large lemons
3 cloves chopped garlic
2 tablespoons dijon mustard
1 cup chopped onion
2 large dry bay leaves
Lawry’s seasoning salt

Combine all the ingredients with your chicken in a large ziploc bag. Seal the bag, pressing as much air out as possible. Squish the contents of the bag around so the chicken is well-coated. Marinate for at least two hours, up to overnight if you like.

Try a nice loin of pork or fresh ham. Both are easily roasted and not greasy (knife and fork). If he’s a hearty eater, then also consider a beef roast or possibly a baked chicken or turkey.

Grilled chicken would be good—use some Jack Daniels original #7 BBQ sauce, it’s great!!
