If I put cayenne peppers in vinegar, do I need to refrigerate them?
I have 6 cayenne plants, and they’re producing now, so to keep the peppers before making sauce, I’m putting them in vinegar. Should I refrigerate also?

I would refrigerate them if you have room in the fridge. Otherwise I think they would have to have an airtight seal.
I put fresh peppers of all types in freezer bags (to prevent freezer burn) and put them in the freezer and they keep for a long time. Tip— wash and dry them first.
Why would you put them in vinegar? It would be better if you put them in some good extra virgin olive oil. For real.
If you boil the vinegar and pour it into the bottle or jar containing the peppers you do not need to refrigerate them. That’s how we make hot sauce at home.
My view would to sauce them and freeze every few days/week.

NO, thats the same as pickeling. Put them in a jar with the vinegar, put the lid on it tightly you,ll get the same results.
