I have a lot of cayenne peppers from my garden.can someone help me ?
I would like a recipe for a hot sauce using fresh cayenne peppers, as I have LOTS of them from the garden and will never be able to eat them all before they go bad.

i like to make pepper sauce by putting peppers into jars and pouring vinegar over them, also put some chopped garlic in with them.

i dont have a recipe for hot sauce but we had a similar situation with peppers last year and we put them on a plate in a sunny window and let them dry out. Then we grounded them up and its great as a way to add some spice to your food.
You could make sofrito and freeze it in small portions.
Please, please wear gloves when handling them! We don’t want to see you posting on here later because your hands are on fire!
Louisiana Hot Pepper Sauce
* 3 cups distilled white vinegar
* 2 teaspoons salt
* 2 pounds cayenne or jalapeno peppers, seeded and chopped ( wear disposable latex gloves, TRUST me on this)
Simmer vinegar, salt and peppers for 5 to 10 minutes.
Process in food processor or blender. Seal in small sterilized canning jars and place in a cool, dark place to age for about 3 months.
Strain a portion of the sauce when ready to use; store in refrigerator.

coat the peppers, garlic and onion with olive oil and roast in a 500 degree oven until the just start to blacken just a little. Put the peppers only in a plastic bag and seal. This will loosen the skin after about 15 min. scrape off the skin and take out the seeds. Puree in a blender with the onions and garlic until very smooth. Put in a jar and add an equal amount of white vinegar, salt and white pepper to taste. BINGO you got hot sauce. The Tabasco you buy in the store is aged in wooden barrels.
