How does this recipe for black beans and rice sound? Would you change anything?
1 cup uncooked white rice
1 tbsp olive oil
1 small onion, chopped
1/2 green bell pepper, thinly sliced
1/2 red bell pepper, thinly sliced
3 cloves minced garlic
2 16-ounce cans of black beans, rinsed and drained
2 tbsp white vinegar
A few dashes of Tabasco or 1/4 tsp cayenne powder
1 tsp dried oregano
Salt and pepper to taste
Cook rice according to package instructions.
Heat oil in a large skillet on medium high. Sauté onions and bell peppers for 3-4 minutes, until just beginning to soften, then add garlic and sauté a minute more. Add the black beans, vinegar and Tabasco or cayenne. Bring to a boil, reduce heat, cover and simmer for 5 minutes.
Stir in rice and oregano. Add salt and pepper to taste.
How does that sound? Would you add or take away anything? I’ve never made it before, but it sounds easy and tasty. Thanks!
Oh, and would a tequila lime tart go well with this? I’m thinking of making it for dessert.

actually , it sounds great to me, add some chorizo sausage if you can, or some good smoked hot sausage.

The person who said omit the vinegar, you would be surprised at how the added vinegar will make this POP!
Sounds really good…the only addition might be Chorizo Sausages….

Sounds wonderful, Do you mind if I steal your recipe? Something different for a change.
Mmmm-what time will supper be ready? I wouldn’t do a thing except add some sausage and cook more than you think you’ll need. Black beans as well as red beans are even better warmed over.
Sounds great, except I like to have lots of toppings on the table for people to use if they want. Like fresh chopped tomatoes, or avocado, or cheese, or sour cream.
The tart would go great with it.
