How do you melt white chocolate into a cheesecake?
So I’m making a raspberry white chocolate for some company tomorrow and I want to try and melt the white chocolate chips into the filling. Anyone who’s ever tried to melt white chocolate knows the results are less than impressive if you mess up. Any suggestions on how I can do this without my chocolate clumping or solidifying?

Put the chips in a metal bowl (or something else that can withstand the heat) and carefully place over a pot of boiling water. This is the best way to melt any chocolate. Once melted and smooth, remove from heat and let cool very briefly. Then, slowly add to your filling.
