How do I make the perfect cheese dip?

Mmm, I love me some good cheese dip. I’m pretty good at making some with Velveta BUT I want to make *WHITE* cheese dip, like the type at mexican stores.

If you answer this question please include the type of brand of cheese you use, where you can get it, and a recipe. Thanks!
