How do I cook Black Eyed Peas?



I have Purple Hull Peas ready to pick in my garden. When I was a little boy we had a small farm and always grew peas and beans to sell. Of course my mom would also cook them. You have to understand that my boys kid that I can’t cook toast, so I need an easy process to cook fresh peas that will not kill the kids, and may taste good. I’m sure it will not be as good as my mom’s, God rest her soul, but I want to share a little of my youth with my kids.

You have to wash them a couple of times and soak them overnight if you want them for morning or lunch or vice versa. Make sure they are completely covered in water. Stir around a little just before you go to bed to make sure all the peas have sufficicent water.

Next morning, remove the water and wash one more time. Fill a thick base pan with water almost 3/4 full, boil over low medium heat, add salt to taste half way through cooking time ( about 30-45 mins) or until softened but whole. Don’t drain water away. Leave in pan till you want to serve or use with another recipes. Usually you can serve it in small serving bowl with a little of the water pour over it. Sprinkle with lemon juice. It is so easy to make.

It goes great when you add coconut milk to it also or added to stews. It depends, there are many ways you can use it. They are delicious.

No soaking is needed for fresh shelled. I just boil them with a piece of bacon. I like “snaps” with mine if there are any young tender pods to use. I like mine with a little Tabasco or vinegar too.
Velvet seems to assume you mean dried. Fresh are a treat most of us don’t get unless you grow your own.
