How do I cook beef and rice in a casserole?



I want to make a tortilla casserole with a southwestern seasoned beef, some rice and salsa as the filling between tortillas.

What would be the best way to cook this? Should I cook the rice separately and then combine them? I know that rice absorbs whatever liquid you boil it in when you let it simmer, which is what I want. But what’s the best way to accomplish this?

MEXICAN CASSEROLE

1 lb. ground beef
1 pkg. chili powder
1 onion, chopped
1 pkg. frozen tortillas
1 can Mexican style beans
1 can cream of chicken soup
Grated cheese to taste
1 can tomato and chilies

Brown beef, chili powder and onion together and drain. Put in greased casserole in this order, beef, tortilla broken in pieces, beans, cheese, tomatoes, chicken soup and cheese. Bake at 350 degrees until done (about 30 minutes). Serves: 6 to 8.

I’ve never done this casserole but I do know you have to cook the rice before you add it.Do you want just plain white rice or mexican style rice?

Cook the meat first and then add your rice.
You have to make sure to have enough liquid for the rice to cook.
If you have a pressure cooker cook the meat with all the seasonings then place in a casserole container add the rice and enough liquid for the rice to cook.
Just remember 1 cup rice 1/12 cup liquid.
Adjust seasonings make sure your water is hot and cook in the oven for 25-30 minutes in medium heat.
