How are giblets placed in a crock pot for making stock?



I read somewhere on how you can make homemade stock from a leftover carcass. I have never done this and it doesn’t seem sanitary, but I am giving it a try. I made chicken for dinner. My family and I ate the chicken. I then proceeded to cut the bones up to fit in my crock pot and all the other stuff from the chicken. I added it to the crock pot. I then cut up 2 onions, 3 celery stalks, 3 carrots, peppercorns, bay leaf, and cold water to cover. I have read recipes that have included the gizzards etc. that come in that little package with the chicken. If I were to add that to the chicken stock, how do I do it? Do I include the bag or just empty it out and throw it in with all the other ingredients? Also, when I skim it after it has cooked for at least 10 hours, will the gizzards come out or stay in there?

You remove them from the bag, it is a waxy paper, and not edible. If you would prefer not to have the solids from the gizzards, then simply put them in one of those little garnish bags, or a piece of cheesecloth tied shut with a piece of cotton string. After it cooks, I simply strain the entire contents and freeze the stock in ice cube trays so that I can control exactly how much stock I add. After they are frozen, I put them in zip bags and use as needed, for a single serving of chicken noodle soup, or a giant gumbo that needs a ton!
