Has anyone ever heard of Poor mans Cake?
My mother was not from the cook side of her family and boiled most everything she made, maybe that is why this cake always tasted good to me she boiled the first part before she added the flour to bake.
I know it didn’t have milk or eggs and that it had sugar raisans, nuts we collected from the walnut tree, oil, flour.
Now that I am in my 40′s I have been hungry for it Qould anyone have the recipe or even heard of it?
I was about 8 when I watched her make it

“In about 1968, we moved next door to a family with seven little boys. Their mother gave me this recipe. It is really delicious. You can frost it, or just eat it like it is.”

INGREDIENTS
1 1/2 cups raisins
1 cup water
1/2 cup cold water
1/4 cup shortening
1 cup white sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/2 teaspoon salt
1 1/2 teaspoons baking soda
2 cups sifted all-purpose flour
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch pan. Sift together the flour, baking powder, baking soda and salt. Set aside.
In a saucepan, combine raisins and 1 cup water. Bring to a boil, then reduce heat and simmer for 15 minutes. Remove from heat and stir in 1/2 cup cold water and 1/4 cup shortening.
In a large bowl, combine sugar, cinnamon, nutmeg, allspice, salt, baking soda and flour. Stir in raisin mixture until well blended. Pour batter into prepared pan.
Bake at 350 degrees F (175 degrees C)
I would think boiling a cup of raisans into this recipe would plump them up and the walnuts should be mixed in just before you pour it into the pan.
