Does a pistachio crack open if you roast them?
A neighbor traded me some pistachios for my pecans. Unfortunately all of them are closed shell. I know this means that they were immature and didn’t ripen completely. However, they’re still good.
If I roast them, will they crack open so I can salt them, or would it be better to crack them all by hand first then brine and roast the shelled nuts?

the pistachions most likely will not open… as you mentioned, ripe pistachios are open before they’re roasted.
