Diabetic cooking question?
This may sound completely ignorant, so forgive me if it does. I’m having a guest stay with me next week who has type 1 diabetes, and I want to make sure that he doesn’t feel rude by refusing anything I make to eat.
So, my question is Can a type one diabetic eat falafel without having it spike their blood sugar level? I know chickpeas are fine to serve (the main ingredient of falafel), I’m just uncertain if it would be bad since falafel is cooked in olive oil before being served. I would rather just make something altogether if he can’t eat it.

It should be fine. Olive oil is very healthy.
Every diabetic seems to process foods a little bit differently, but the one thing we all have in common is that we have trouble with carbs. So the olive oil isn’t going to be an issue; if there is a problem, it’ll be the chickpeas or the pita bread.
I suggest you serve the felafel with plenty of salad (to slow the blood-sugar spike) and whole-wheat or lo-carb pita, if you can find it.

I’ve never heard of olive oil being bad for anyone with diabetes. My dad had Type 2 – adult onset. Your friend must have lived most his life with his. I don’t think he would mind you asking about his dietary restrictions. You could also check out the dietary section of the American Diabetes Association’s website…it has good info.
with a diabetic diet, think fresh, not processed and mostly meat and veg. Carbs are generally whole grain and definitly a specific number of them. It is virtually impossible to cause an issue with blood sugar with veg like green beans, peppers, onions, celery cucumber, lettuce, cabbage, broccoli cauliflower. Corn, peas, squash, potatos are different as they are starchier and a diabetic must limit thier intake. Fruits are counted as well because of the natural sugars in them. your guest will probably not have an issue with the falafel but may only eat a small portion. Offer plenty of fresh veg and lean meats to go with it.
