I love sweet but spicy salsas they are so great in the summer months.

Heres one thats great on pork chops:
Ingredients
4 medium pork chop (*I used a family pack of breakfast-cut pork chops, but any cut will work)
olive oil
garlic
salt
pepper
1/4 cup green onion
1/2 cup salsa
1 (10 ounce) can diced tomato
1/2 teaspoon cumin
1/2 teaspoon dried oregano
1 tablespoon peach jam
1 fresh peach, peeled and diced (if available)

*preheat oven to 350.
*heat lightly oiled skillet.
**transfer chops to a baking dish.
add more oil to the skillet.
*cook garlic and onions until tender.
*add salsa, tomatoes, salt, pepper, cumin, oregano, jam, and fresh peach pieces and heat through.
*pour salsa mixture over chops and cover baking dish with aluminum foil.
*bake in oven for about 50 minutes or until chops are tender.

Sweet and Spicy Mango Pineapple Salsa:
Ingredients
2 mango, ripe, peeled and cubed
1/2 cup fresh pineapple, cubed with juice
1/4 red onion, diced
1-2 minced garlic clove
3 green onion, tops and all, thinly sliced
1/2 red bell pepper, diced (yellow or orange)
1 jalapeno pepper, diced
1 lime, juice of
2 tablespoons fresh cilantro, minced (to taste)
1 dash sea salt
1 tablespoon coriander

*Peel and cut mango into cubes, discard seed.
*Dice pineapple, saved juice.
*All other ingredients can be diced in the food processor. *Careful not to over “pulse” to too fine a texture.
*Combine all ingredients and let sit for one hour or more before serving.
*Serve with tortilla chips.
Notes:.
*Use more or less of your favorite ingredients.
*Sometimes the jalapenos are not very spicy, feel free to add hot sauce (Tobasco) to spice it up if desired.

Ive tried this one many times and always change it up with papaya instead of pineapple, grapefruits, guava, strawberries, watermelon to name a few. And for more of a kick I added Scotch Bonnets which proved to be to much heat and not enough sweet..lol So I use a combination of Poblano pepper with 1 jalapeno and its definatly a great sweet to spicy combo. Have fun and best wishes
