Can you substitue soy milk in a regular ice cream recipe?
I’ve been a vegetarian for a long time, but I just decided to go vegan. I’m in 8th grade, and my science teacher is doing a project where we make ice cream. We have to find the recipe ourselves and bring in the ingredients Thursday (January 8, 2009).
Can you just use soy milk instead of regular milk in normal homemade ice cream recipes? Does it taste any good? Or do you need a different recipe all together? Anyone know any good ones?

Here are a couple of facts for you:
Myth: Soy estrogens (isoflavones) are good for you.
Truth: Soy isoflavones are phyto-endocrine disrupters. At dietary levels, they can prevent ovulation and stimulate the growth of cancer cells. Eating as little as 30 grams (about 4 tablespoons) of soy per day can result in hypothyroidism with symptoms of lethargy, constipation, weight gain and fatigue.
Myth: Soy foods are safe and beneficial for women to use in their postmenopausal years.
Truth: Soy foods can stimulate the growth of estrogen-dependent tumors and cause thyroid problems. Low thyroid function is associated with difficulties in menopause.
Consumption of unfermented soy products is probably not such a good idea. Unfermented soy contains high levels of a number of compounds that can: block the absorption of calcium, magnesium, iron and zinc; stunt growth; and alter hormone levels, disrupting menstruation, lowering testosterone, increasing the risk of breast cancer, and causing thyroid and prostate complications. Unfermented soy includes things like soy milk, soy burgers, soy hot dogs, and tofu.

here you go, i have tried bought vegan ice cream and it was very good, this homemade recipe will probably be great.
Yes, soy milk can definitely be used. For really creamy vegan ice cream, you can also use coconut milk or a combination of soy milk and coconut milk. Yum!
I’m not really sure but I know I’ve seen soy based ice cream and yogurt in the organics department of grocery stores. Just not sure if the process to make it is the same as with regular milk. That would be a good experiment to bring up to your teacher:can soy milk ice cream be made in the same traditional way as regular ice cream. Try it and see what happens! But tell him that this is an experiment! And that you want to see if the other students can taste the difference without knowing it was make with soy milk! I think that would be fun to test!

Yeah, soy milk is a great substitute. There are many ice cream brands that use soy milk instead of cow’s milk.
