there should be a recipe on the box.
That is the whole purpose behind the ingredients in the box.
My secrets to making good cornbread from a mix are:
Add about a few tablespoons additional milk.
Add a tablespoon of mayo (helps make it light and fluffy).
DO NOT overmix–it’s okay if it’s a little lumpy, just make sure all of the dry parts are coated with mix.
Also, it could be that your oven and the box directions just don’t get along. Check ‘em a few minutes early…

You can use it for more than just cornbread
Jiffy Breakfast Casserole
1 pound Owens Hot Sausage
1 package Jiffy Cornbread Mix
1/2 Onion chopped
1 Egg
8 Jalapeno pepper slices chopped-the pickled jalapenos (optional)
2/3 cup Milk
1 8 ounce package grated Sharp Cheddar cheese
Brown the sausage and onion and drain the fat. Place the meat mixture in a square baking dish, sprinkle with chopped jalapeno and top with cheese. Mix the cornbread mix according to package directions, using 2/3 cup of milk instead of the 1/3 called for on the package, and spread over the cheese. Bake in the oven according to the cornbread package directions until the cornbread is golden brown on top.

Jiffy Mexican Casserole
1 lb Ground meat
1 cn Kidney beans or ranch style
1 Onion chopped
1 cn Tomato sauce
Garlic chopped
1 Box jiffy cornbread mix
1 cn Corn
1 c Grated cheese
mix veggies with ground meat. season meat with salt and pepper and a little red pepper. Brown ground meat, drain. Add corn, tomato sauce and beans. Mix well and put in casserole dish. Make cornbread mix according to directions, add cheese to cornbread mix, and pour over meat mixture. Bake according to package directions till golden. You can also add more cheese, or add hot peppers.

Jiffy Cornbread Salad
1 pk Jiffy cornbread mix, cooked
1/2 c Sweet pickle relish
1 md Bell pepper, chopped
1/3 c Sweet pickle juice
2 lg Tomatoes, chopped
1 c Mayonnaise
1 lg Onion, chopped
3 Eggs, hardboiled
1 pk Cooked ham, chopped
6 sl Bacon, cooked
Prepare mixture of bell pepper, tomatoes, onion, ham, pickles, juice, and mayonnaise. Crumble cornbread. Alternate layers of cornbread and a layer of mixture. Crumble bacon over last layer and top with sliced boiled eggs. Refrigerate overnight.
follow the instructions on the box for johnny cakes. if there isn’t one on the box, just take a small skillet or pan and put it in the oven with a couple of pats of margarine or butter. After the marg. or butter melts, spread the jiffy mix (follow the instructions for corn muffins). Bake at 375 for 15- 25 minutes. (If you like your cornbread sweet, add a teaspoon of sugar.)
It’s the same mix, and the recipe is on the back. I like to add a Jiffy yellow cake mix to it; and a small can of drained corn; and the total of eggs & liquid called for on both boxes. Bake it in a square pan for the lowest amount of time & temp on the boxes, and test it for doneness (toothpick comes out clean) ….. You’ll have fluffy, sweet cornbread which is wonderful with a honey-butter mixture

CORNBREAD CASSEROLE
1 Jiffy cornbread mix
1 whole corn can (well-drained)
1 creamed corn can (well-drained)
16 oz sour cream
a couple tbsp margarine (cubed and mixed in with corn mixture)
Mix, bake at 375 for 45 minutes.
Just pour the batter in an 8″ square pan instead of muffin cups. Bake at 400 until golden brown.
