Can I re-use olive oil and vinegar mix that was used as a marinade?
I had cherry peppers marinating in olive oil and vinegar for a few days in the fridge. The proscuitto and provolone was stuffed in the peppers after I took them out of the marinade. I hate to throw away all this olive oil (being so expensive)! Could I save the mixture for another recipe in the future?

Sure
The only time you should ever NOT reuse it is if you have raw meats sitting in it (beef, pork, chicken, etc), or items that have been in contact with those items. With those, throw the marinade.
After contact with meats throw it or cook it.

you can reuse it for a similar recipe if you use it quickly, but anything that had contact with meet should not be stored for more than 2 days in the fridge… and whatever you marinade in it has to be cooked to make sure its safe

Especially considering the high price of olive oil.
I wouldnt recommend you to use olive oil from marinades if you have marinated in them raw meats (fish, chicken, meat), unless the marinade oil that you are going to use is for cooking but I wouldnt use it anyways.
But in your case you are safe, go ahead and prepare other nice stuff, it will get very tasty as the marinade already has a lot of flavors in it.

If all you were marinating was the peppers then it should be ok. If the marinade ever touched raw meat you would have to throw it out. I would also have to wonder if some of the pepper flavor might not have leached into oil. If you are ok with that you’ll probably be fine.
yes you can reuse the marinade if you have been careful not to let it have contact with the meat, keep in an airtight container…..
As long as there was no raw meat product in the marianade you’re fine to reuse it.
this marinade mixture, because it had peppers in it, will be delicious when you re-use it. not only would i say re-use it to save money, but re-use it because it’s delicious!
any marinade you use for veggies should be used for something else later, because of the rich flavor it will develop. however meat marinades that have touched raw meat should never be reused due to the bacteria.
Like Kissa, when I read marinade, my mind first went to raw meats.
Re-using a marinade that was only used for vegetables should be fine. Be sure to smell it first to make sure it’s still good, though.
