bean sprouts?

are there nutrional benefits from eating bean sprouts (various beans/lentils, chickpeas etc.), that differ from just eating the bean itself. Is there a benefit to eating bean sprouts because they are raw and usually non-sprouted beans are cooked before they are eaten?

Advocates of a raw food diet promote the use of sprouting as an effective way to increase the nutrient value, and digestibility, of beans, seeds and nuts. Sprouts are in fact the most nutrient dense food on earth – nutrient density refers to the amount of nutrients per calorie. This is why many people on a low-calorie diet make sprouts and baby greens the mainstay of their diet, especially blended for easier digestion.

Bean Sprouts.
Benefits.
*Good source of vitamin C.
*Useful source of B complex vitamins.
*Low in kilojoules.
*Provide easy-to-digest protein.
Drawback.
*Alfalfa sprouts may provoke allergic reactions in some people particularly those suffering from lupus.

Yes, they’re actually “living” and full of nutrition, ready for digestion with amino acids, simple sugars, etc. They’re full of antioxidants! They rank among the absolute healthiest of foods anywhere in the world. I make entire salads out of them. You feel awesome when you eat them, too!

I sprout my own, and it’s really cool!
