Are zucchini seeds edible?



I have a few large zucchinis and I cut them open, the seeds look roastable! I want to roast them and eat them- they are fairly large. I know some seeds are poison– are these okay to eat just like any other squash seed?

The seeds are fine, no worries on poison. Roasting is not probably going to work. They have so much water and they don’t have a seed per say like a pumpkin seed. I like to grill large zucchini like you have either cut 1 1/2 inch slices, drizzle with olive oil and grill. Zucchini bread is the best, I would definitely make some of that.

Yes. Try it, and let us know how it works. A better use would be to dry them out and plant them because zucchinis are really easy to grow.

I totally roasted some from a massive zucchini today, and they came out wonderful!

I saved hundreds of seeds from Giant King Courgettes grown in London…I haV enough to re-sow and plenty to eat too. Very liTTle info on nutritional content of courgette / zucchini seeds. One would assume a very similar content to pumpkin and squash seeds?
Magnesium…? Nonetheless, it’s worth growing them for the seeds too…
