Just bake the chicken in the oven for about half an hour at about 375 degrees, or use a food thermometer to help you out. Also, if you slice into the chicken it shouldnt be pink when its finished, but should be juicy and white.
Cook up the veggies in a wok or skillet with some salt, pepper, paprika and some butter or veggie oil..you could also just make the noodles and toss them all together and add some soy sauce or other flavouring. Serve with your chicken and its a simple and yummy meal.
Make some vegetable lo-mein:
***for sauce***
1/2 cup low-sodium fat-free chicken broth
5 tablespoons low-sodium soy sauce
1 tablespoon lemon juice –plus
1 teaspoon lemon juice
2 tablespoons brown sugar – –packed
2 cloves garlic — pressed
***for stir-fry***
salt
12 ounces uncooked linguine or spaghetti
nonstick cooking spray
1 tablespoon canola oil
1 yellow onion –peeled and sliced lengthwise in wedges
1 carrot –peeled and sliced lengthwise in strips
1 yellow –red or green bell pepper seeded and sliced in strips
12 ounces broccoli florets
ground black pepper
1 tablespoon cornstarch –mixed with
2 tablespoons chicken broth or water

Directions:
To prepare sauce: Combine broth, soy sauce, lemon juice, brown sugar and garlic in a small bowl or measuring cup. Stir well to dissolve brown sugar. Place near the stove.
To prepare stir-fry: Bring a kettle of lightly salted water to a boil; cook pasta according to package directions. Drain and set aside. Lightly coat a wok or large skillet with cooking spray. Heat oil in wok until very hot, then add onion wedges. Cook over medium-high heat, stirring frequently, for 2 minutes. Add carrot, bell pepper and broccoli; cook, stirring occasionally, for 5 to 7 minutes or until broccoli is tender but still crisp. Pour in sauce; bring to a boil.
Stir in cooked pasta; stir to coat evenly with sauce. Add black pepper
The first idea is to take whatever veggies you have and slice them thin. Then season you fish with salt, pepper and olive oil. Place this on a piece of tin foil or parchment paper and top with all your veggies. Seal it tightly so it’s like a pouch. Let this cook about 15 – 25 minutes depending on the fish. It’s realy good and has a great fresh flavor. Another thing is to do sautee all the non starchy veggies you have in olive oil with garlic until they are slightly browned. Make sure you season them liberally with salt and pepper. Cook your pasta and add the pasta to your veggie pan with about 1/2 c. of your pasta water. With parm cheese it is better, but still good without. Top with some fresh basil if you have it.
